Carrot cake with cream cheese.

The day when I crave for carrot cake and it is difficult to find one here.. 

Here you go, my 5 hours effort in the kitchen.


4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon (I prefer 1 teaspoon)
3 cups grated carrots
1 cup chopped pecans

Just add and mix everything, bake in preheated oven at 150°C for 40-50 minutes, and tadaaaa!

P.s. For cream cheese frosting, butter, cream cheese, icing sugar and vanilla extract are needed. I added according to my taste, not too sweet, not too plain. So no specific recipe that I referred to. Sorry.
